Another month has flown by. My Stable Kitchen has been busy during the previous few weeks, both with customers & creating new updates for our menu.
Earlier in May, we catered for a film company, who were doing some research, prior to filming at Great Chalfield this month. Forty seven lunches were duly, prepared & packed to sate their appetites on their home bound coach journey.
Their chosen menu, catered for all dietary requirements. Gluten free, Dairy Free, Vegetarian & Vegan, all freshly homemade on the day Four different salads accompanied either, cheddar cheese, feta, olives & sun-dried tomatoes,or humus, along with a selection of six different home made breads. A gluten free Lemon Mousse Cake was also on offer for dessert. It was very gratifying to receive a lovely comment from them, on the visitors book page of my website.
Bread is one of my favourite foods, not he nasty, plastic, additive containing, bread you get from the shops, but real doughy breads, full of flavour & goodness & more that a sprinkling of different seeds. One of the reasons I decided to experiment with different breads was because I have been following a low FodMap diet, you can read my blog on the subject if you follow the link.
Shop brought bread, I found, was one of the most bloat making foods in my diet. So, rather than give it up, I decided to make my own breads using different Organic flours & local products. The results were amazing, no longer did I swell up like a balloon after eating bread & the flavour was far superior to anything shop bought. I have a strong suspicion that apart from Celiac’s, to whom, gluten is a serious issue, most people who perceive themselves as “Gluten Intolerant” are more susceptible to the additives & preservatives, so commonly found in the mass produced, ready meals & products in today’s food market.
Look forward to seeing a range of my homemade breads served Ploughman’s style with Salads & Smoked Mackerel, Cheddar, humus or Smoked Salmon. Perfect for a picnic.
A very, very, naughty but nice sweet pie is also on the menu. A version of the recipe for my Chocolate, Banana & Peanut Butter Pie, can be found on myrecipeblog This dessert is a great treat for this time of the year as it needs very little cooking, so you won’t have to spend hours in the kitchen.
Making the most of seasonal soft fruits, I have also added a gluten free raspberry ice cream, & pictured at the top of this blog, Chocolate & Strawberry gateaux, also gluten free.

Truffleicious News letter May 2018
At last the sun is shinning on Truffleicious Stable Kitchen & garden. How long it’s going to last, I couldn’t say, but while its here I’m going to make the most of it, so without further ado here is our News Letter for the merry month of May.
Lets deal with the healthy food first & move onto the naughties later.
Salads, Frittata’s & Low Gluten Pastry & Breads will play a large part of our menu this month & through out the summer. Most of the salads will be Gluten Free & Dairy Free.
These salads will change regularly to incorporate different fruits & veg as they come into season. I will no longer be using white or whole meal flours in my baking, replacing it with the ancient grains of Spelt & Rye. You can find out more about these flours in my blog, by following the link here>> Low Fodmap diet, Rye & Spelt On the menu this week was a vegetarian Chickpea, Tomato & Pepper Pie, made with Spelt Pastry.
I just love bread, although I am not Gluten Free myself, I have been following a Low FodMap Diet & have found, I do not have a problem with home made bread. [Proscessed food doesnt suit me]. As people are more aware of their sugar intake, I have also discovered that savoury products are more sought after, than sweeter options these days. I have developed a range of recipes, again using spelt & rye, but also utilising a range of root vegetables, which both keeps the product moist & adds a slight natural sweetness. These products are homemade & contain no Flour improvers, additives or preservatives. Pictured below are Cheese Twists, Rye, Sweet potato & Cinnamon Loaf, Spelt & Linseed Rolls & Sweet Potato Scones. I am also working on an Olive & Sundried Tomato sharing Bread & a Fennel & Prosciutto Loaf. If you are coming the Great Chalfield Plant Fair, this Sunday 6th May, you will be able to see & taste the final products.
If you fancy an alfresco picnic in the beautiful gardens at Great Chalfield Manor why not bring a bottle of wine & partake of some olives dressed in our home made Herb & lemon dressing, some of our home made bread & some dipping oil. Perfection.
Now on to the naughties. Ice cream & Chocolates. Last year I started making Ice Cream, during the summer months which proved to be welcomed by my loyal followers. This week I have made Raspberry Eaton Mess G/F, V Rich Vanilla Gelato GF, V & for those of you who are Dairy Free a Coconut Ice. GF, DF, V. My Ice creams are made with local free range eggs & fresh local milk. They contain no Artificial flavourings, additives or preservatives & are made weekly in small batches. My chocolates & Truffles, are also preservative & additive free & made with Belgian Chocolate, the dark chocs containing 70% cocoa Mass.
Our very popular Lemon Mousse Cake GF, V is still on the menu along with the men’s favourite, Wiltshire Spelt Cider Cake.

These come in 3 different varieties & can be decorated (not dairyfree) or left unadorned for the purists among you.

Why do I publish this website & blog?
Well the obvious reason is to attract potential customers to savour the delights of my homemade, own recipe food and associated foodie services.
BUT the real reason is that I LOVE FOOD.
I love cooking it, writing about it, taking pictures of it, thinking about & creating new recipes with it, teaching about it AND above all EATING it.
